Ingredients

For the Chicken

  • 1 chicken breast or chicken steak, diced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon thyme

For the Risotto

  • 250 g mushrooms, sliced
  • 3 spring onions (green parts), finely sliced

  • 300 g Arborio rice
  • 1 litre beef broth, kept warm
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste

Instructions

Step 1: Cook the Chicken

Heat the olive oil in a large pan over medium heat.

Add the chicken, season with salt, pepper, and thyme, and cook until golden brown and fully cooked through, about 5–6 minutes.

Remove from the pan and set aside.

Step 2: Cook the Mushrooms

In the same pan, melt the butter and add the mushrooms.

Cook for about 6–8 minutes, stirring occasionally, until the mushrooms release their moisture and become lightly golden.

Remove from the pan and set aside.

Step 3: Sauté the Spring Onions

Add a little more olive oil to the pan if needed.

Add the spring onions and garlic and cook for 1–2 minutes until softened and fragrant.

Step 4: Toast the Rice

Add the Arborio rice to the pan and stir for 1–2 minutes until the grains are coated and slightly translucent around the edges.

Step 5: Add the Broth

Add one ladle of warm beef broth and stir regularly.

Once most of the liquid has been absorbed, add another ladle of broth.

Continue adding the broth gradually, one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.

Repeat this process for about 18–20 minutes, or until the rice is creamy and tender.

Step 6: Finish the Risotto

Stir the cooked mushrooms back into the risotto.

Optional: Stir in a little butter for extra creaminess.

Taste and adjust the seasoning with salt and pepper.

Serving Suggestions

Once the risotto is creamy and tender, stir the cooked chicken back into the pan. Mix well until everything is evenly combined and heated through.

Serve immediately while hot and creamy. Garnish with extra spring onions and a sprinkle of fresh thyme, if desired.

This risotto pairs beautifully with a simple green salad and a glass of white wine.

Tips for Perfect Risotto

  • Keep the broth warm throughout cooking.
  • Add the broth gradually rather than all at once.
  • Stir regularly to help release the starches and create a creamy texture.
  • Avoid overcooking the rice; it should be tender with a slight bite.
  • For extra richness, stir in a little butter just before serving.

What I love most about this chicken and mushroom risotto is how a handful of simple ingredients can come together to create something so comforting and satisfying. The creamy rice, tender chicken, and earthy mushrooms make this a meal I find myself coming back to again and again, especially on days when I want something warm and homemade.

One of the best things about risotto is how versatile it is. You can easily adapt it to your own taste by adding different vegetables, herbs, or even your favorite cheese.
