There’s something so comforting about a simple homemade cake, especially one that’s soft, moist, and easy to make with everyday ingredients. This yoghurt blueberry cake is one of those recipes you can make without stress, which makes it perfect for beginners or anyone looking for a lighter homemade bake.
What I love most about this cake is how the yoghurt keeps it beautifully soft and fluffy while adding a little freshness to the flavor. Combined with juicy blueberries and a touch of lemon, the result is a cake that feels light, comforting, and not overly sweet.

Ingredients
- 180 g yoghurt
- 120 g sugar
- 300 g flour
- 100 ml oil
- 2–3 eggs
- 10 g baking powder
- 10 g vanilla sugar
- 1–2 tsp lemon juice
- Blueberries

3.
Preparation
Preheat your oven to 180°C (350°F) and lightly grease your baking tray or loaf pan.
In a large bowl, whisk together the vanilla sugar, eggs, and sugar until the mixture becomes slightly light and fluffy.
Add the flour, baking powder, oil, and yoghurt, then mix everything together until you have a smooth batter.
For the lemon flavor, you can either use fresh lemon zest with a little lemon juice or simply use packaged grated lemon peel or lemon flavoring if that’s what you have available.
Gently fold in the blueberries, being careful not to overmix the batter.
Pour the batter into the prepared baking tray and bake for about 35–40 minutes, or until the cake is golden on top and fully baked through.
Allow the cake to cool for about 10 minutes before slicing and serving.
